Thyme Mushroom Farro Salad in a clear serving dish

What’s the second reason? Mushrooms, of course. Fungi are full of health benefits, and shiitakes in particular are not only delicious but rich in polysaccharides and other beta-glucans. These compounds protect against cell damage, help boost immunity and bring down inflammation.

But what’s the point of eating nutrient-dense food if it doesn’t taste good? This recipe adds onion, veggie stock and spices for flavor, and pairs sharp and earthy thyme with nutty farro and meaty, buttery shiitakes for a healthy meal everyone will love.

Ingredients

1 tablespoon olive oil

1 medium-sized white onion, chopped

1 cup shiitake mushrooms, sliced

1/4 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

2 cups farro

6 cups vegetable stock

1 tablespoon fresh thyme

⅓ cup Parmigiano Reggiano, shaved

 

Directions

  1. Heat oil in pan and cook onions for 1 to 2 minutes. Add mushrooms and cook for another 3 to 4 minutes, or until mushrooms are soft and onions translucent. Set aside.
  2. Place farro in a pot with vegetable stock and bring to a boil over high heat. Reduce heat to low, cover, and let cook for 25-30 minutes, until it is softened but still chewy. If there is any liquid remaining, drain it off. Set aside and let farro cool.
  3. Combine farro, onions, mushrooms. Mix in thyme. Season with salt and pepper.
  4. Top with Parmigiano Reggiano.

WHY WE LOVE THIS RECIPE

In the world of grains, it doesn’t get much more nutritious than farro. This ancient grain is a great source of protein and fiber plus nutrients like magnesium for healthy bones, nerves and muscles; zinc for wound healing and boosting immunity, and vitamin B3 (niacin) for healthy skin, hair and eyes. But shiitake mushrooms are the star of this show, shining through with their rich and savory flavor while helping to fight cancer, boost immunity and support heart health.
