Sweet Potato Hash with Fresh Herbs, sliced sausage, Peppers and Onions

This kind of dinner falls into one of our favorite categories. We call it “recipes that basically just require you to throw a pile of healthy food into the oven.”

Other than quickly chopping up the sweet potato and garlic, that’s really all the process requires.

It helps that you start with precooked chicken sausage (and it’s now easy to find healthy, organic brands at the grocery store).

And the addition of fresh herbs creates an even further illusion of long hours spent cooking. Use the time you saved to savor the delicious, nutrient-dense meal while catching up with your significant other (not checking Instagram).
