Kale Salad with Carrots

We never met a kale salad we didn’t love.

This one’s selling point is its simplicity.  There’s no massaging required, you just chop the kale as finely as possible, toss it with carrots, and add the dressing.

Pro tip: Make extra dressing and save it for a kale-apple salad the next day.

Kale is one of the most nutrient-dense greens you can find. Hence, it’s reputation as the wellness world’s trendiest food. Carrots are an amazing source of beta-carotene, which the body converts to vitamin A for good vision, strong immunity, and healthy skin. The fresh, simple dressing is also filled with goodness.
