Eggs or oatmeal for breakfast? Why not make it both?

Both are delicious and can be made many ways, but a personal-sized Oatmeal Pancake is a fun way to mix up your routine…and get healthy breakfast staples all in one meal.

It takes just a few minutes to make, and I know how busy your mornings can be.

 

INGREDIENTS

  • 2 eggs
  • 1/2 cup rolled oats
  • Pinch cinnamon
  • ½ cup cottage cheese (fat level of choice)

DIRECTIONS

  • Whisk eggs with fork.
  • Add oats and cinnamon, mix well, and let sit for at least 5-10 minutes.
  • In a pan over medium heat, pour mixture 4-5 inch rounds and cook until almost set, approximately 2 ½ minutes before flipping to cook through.
  • Plate, top with cottage cheese, and sprinkle with cinnamon. Serve warm.

WHY WE LOVE THIS RECIPE

Oatmeal is filled with heart-healthy fiber and helps you stay full and satisfied, eggs contain protein for muscle muscle growth and repair and choline for brain health. Finally, cottage cheese is a great source of calcium for bone health.
