Eggs or oatmeal for breakfast? Why not make it both?
Both are delicious and can be made many ways, but a personal-sized Oatmeal Pancake is a fun way to mix up your routine…and get healthy breakfast staples all in one meal.
It takes just a few minutes to make, and I know how busy your mornings can be.
INGREDIENTS
- 2 eggs
- 1/2 cup rolled oats
- Pinch cinnamon
- ½ cup cottage cheese (fat level of choice)
DIRECTIONS
- Whisk eggs with fork.
- Add oats and cinnamon, mix well, and let sit for at least 5-10 minutes.
- In a pan over medium heat, pour mixture 4-5 inch rounds and cook until almost set, approximately 2 ½ minutes before flipping to cook through.
- Plate, top with cottage cheese, and sprinkle with cinnamon. Serve warm.
