Oatmeal Pancake

You might get sick of switching back and forth between eggs and oatmeal for breakfast.

Ingredients

2 eggs

1/4 cup rolled oats

Pinch cinnamon

½ cup low fat cottage cheese

 

Directions

Oatmeal Pancake
  1. Whisk eggs with fork.
  2. Add oats and cinnamon and mix well. Pour into small non stick pan that has been coated with cooking spray and cook until almost set, approximately 2 ½ minutes, then flip and cook for approximately 30 seconds.
  3. Top with cottage cheese and sprinkle with cinnamon.
