Yerba Mate Energy Bites

Step away from the chocolate chip cookie. An ideal snack provides protein and healthy fats to keep satisfied and give you energy. These bites do that and so much more—without a sugar crash.
Cashews and almond butter provide plenty of healthy fats and also bring in some protein to add to what the oats contribute. Then, we add the secret ingredient: Argentine yerba mate. Yerba mate has energy-boosting powers that are similar to coffee’s, and it’s also filled with vitamins and minerals.
Finally, these bites are seriously delicious without a touch of added sugar, thanks to sweet dates and a touch of vanilla.
Make a batch on Sunday so you’ll have them to reach for when the afternoon slump hits all week long.
Ingredients
Directions
- In a high power blender or food processor, add the Argentine Yerba Mate and blend until finely powdered.
- Add the remaining ingredients, saving about 1/4 cup of rolled oats.
- Blend on low until all ingredients are fully incorporated. Scrape sides or add a tablespoon of water for blending as needed.
- When incorporated, stir in the remaining 1/4 cup of oats.
- Roll into 1-inch balls and refrigerate until firm. Optional: roll in unsweetened coconut.
- Store in airtight container in refrigerator.
