This tangy, crunchy, nutty salad is simple but complex in flavor. Plus, it’s healthy and easy to make. What’s not to love?
We use hearts of romaine as our base and layer it with delicious, toasted hazelnuts, which are an easy source of plant-based protein and heart-healthy omega-3 fatty acids.
Add some dollops of earthy, tangy, creamy goat cheese and our delicious vinaigrette dressing for a flavor-packed salad you’re sure to be craving. Toss some kale microgreens on top to give the dish texture, flavor and an extra-nutritious punch.
INGREDIENTS
- 3 cups Romaine hearts
- 2 tablespoons goat cheese, crumbled
- 2 tablespoons hazelnuts, toasted
- To Make Dressing: (makes 2 portions)
- 2 tablespoons white wine vinegar
- 1 teaspoon honey
- Kosher salt and freshly ground black pepper, to taste
- 3 tablespoons olive oil
- 1/2 cup kale sprouts
DIRECTIONS
- Mix romaine hearts, goat cheese, hazelnuts in a big bowl.
- Mix vinegar, honey, salt and pepper in a bowl. Slowly whisk in oil. Pour over salad and toss.
- Top salad with kale sprouts.
