We’re taking a couple of cues from Korean barbecue on this one.

If you’ve never had it, the cuisine is all about taking grilled meats and eating them with veggies in lettuce wraps.

No, you’d never find mozzarella or roasted chicken while eating the real deal; we’re just talking inspiration, here.

Plus, any dish that calls for kimchi gets us excited. The fermented Korean condiment is so crazy flavorful and delicious and is amazing for your gut health.

INGREDIENTS

  • 1 tablespoon Dijon mustard
  • 2 large romaine lettuce leaves
  • 4 ounces roasted chicken breast, skin removed
  • 1 ounce fresh mozzarella cheese, shredded
  • 1/2 cucumber, peeled and chopped
  • 1/2 red bell pepper, chopped
  • 1/2 yellow bell pepper, chopped
  • 1 tablespoon kimchi (optional)

DIRECTIONS

  • Spread mustard evenly between lettuce leaves and evenly distribute chicken on lettuce leaves.
  • Divide cheese and top chicken, then, top with chopped vegetables.
  • Top veggies with kimchi.
  • Roll up lettuce wrap.

WHY WE LOVE THIS RECIPE

Instead of a bready sandwich, romaine lettuce holds it all together while providing vitamins A, K, and C, plus folate. You’ve got plenty of other veggies and chicken for protein, and kimchi to make your gut microbes happy (trust us, you want them to be happy).
