Hearts of Palm and Artichoke Salad
Hearts of palm and artichokes are both kind of exotic as far as vegetables go, so if you make this salad for friends they’ll probably think you’re super fancy.
Or, it’s a great dish for when you’re just so sick of the same old kale and spinach salads. You need options, OK?
Veggie variety not only prevents you from getting bored of your healthy diet, it’s also important to ensure you’re getting in a wide range of nutrients.
INGREDIENTS
- 1/3 cup olive oil
- 2 tablespoon rice vinegar
- 1 teaspoon sugar in the raw
- pinch salt
- pinch freshly ground black pepper
- 14 ounces hearts of palm, drained
- 14 ounces artichokes in water, drained
- 1 cup cherry tomatoes
- 1 avocado
- 2 cups arugula
DIRECTIONS
- Mix together the olive oil, vinegar, sugar, salt and pepper.
- Cut the hearts of palm into 1/4 inch circles, slice artichokes and tomatoes in half and slice avocado into 1/4 inch cubes.
- Place hearts of palm, artichokes, tomatoes and avocado in medium sized bowl and toss gently with dressing.
- Dress the vegetables with the dressing and serve over the arugula.
WHY WE LOVE THIS RECIPE
Hearts of palm provide fiber; artichokes are loaded with antioxidants. Arugula is obviously a delicious, nutritious green and avocado provides healthy fats.
