Broiled Lemon Pepper Cod

broiled-cod

Broiling is an amazing way to cook fish.

It’s super fast, and the the fish stays moist on the inside (no long cook times to dry it out) while crisping up on the outside.

This approach to a delicious white fish filet also keeps the seasoning simple (in a good way), resulting in a peppery, zesty dish best served alongside lots of veggies.

INGREDIENTS

  • 4 ounces cod
  • to taste sea salt
  • to taste freshly ground black pepper
  • 1/3 juice lemon wedge
  • to taste paprika

DIRECTIONS

  • Preheat broiler. Season fish with sea salt, pepper, lemon juice and paprika.
  • Broil 4 to 6 inches from the heat for 8 to 12 minutes.
  • If you prefer to bake fish, bake at 375-475°F for 10 to 12 minutes, depending on thickness.

WHY WE LOVE THIS RECIPE

Cod is a good go-to when it comes to heart-healthy white fish, but you can also mix it up and swap other varieties in, no problem. (Check seafoodwatch.org to find out which are the most sustainable options near you.) Either way, you’ll have this protein-rich meal on the table within minutes.
