Easy Lettuce Cups


Chicken sandwiches, chicken salads, chicken wraps. You get sick of the old standards, and that’s when it’s time to put your chicken in a “lettuce cup.”

Inspired by cuisines like Korean barbecue, in which wrapping meats and vegetables in leafy greens is a go-to, these crunchy vessels taste amazing filled with chicken, tabbouleh, peppers, and avocado.

Don’t constrain yourself, though. You can put almost any kind of vegetables and grains in there with your chicken (or even switch up the meat).

INGREDIENTS

  • 1 whole Rotisserie chicken
  • 2 heads Romaine, Boston or Bibb Lettuce
  • 1 cup shredded carrots and thinly sliced red peppers or other vegetables of your choice
  • 2 tablespoons Keri’s Lemon Dressing
  • 1 avocado, sliced
  • 2 cups prepared tabouleh salad

DIRECTIONS

  • Pull the skin off of the chicken and discard. Shred the chicken with your fingers, or cut it into cubes.
  • Toss shredded veggies with lemon dressing.
  • Fill the lettuce leaves with all of the ingredients—you can serve the tabouleh salad in the lettuce wrap or on the side.
