Having a few variations on a classic balsamic vinaigrette up your sleeve is a must for any home cook.

This one’s pretty creative: add some pureed blueberries into the mix and you’ve got a much sweeter dressing.

Use it to balance out salads that have some bitterness or bite, like those made with arugula, dandelion greens, or frisee.

INGREDIENTS

  • 1 cup pureed blueberries
  • 1/3 cup balsamic vinegar
  • 2/3 cup olive oil
  • 1/3 cup water
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

DIRECTIONS

  • Whisk all ingredients together until combined.
