Spinach Salad with Pomegranate Dressing
It’s kind of hard to know what to do with plums, other than just bite into them whole.
Unlike other fruits like apples, there aren’t millions of recipes that explain millions of ways to cook with them, from savory salads and soups to sweet crisps, pies, and crumbles.
This recipe takes a little bit of the mystery away. Make it once and you’ll know plums pair really well with pecans, mint, and feta. Hey, it’s a start.

- Combine pomegranate juice, oil, vinegar, and mint in small bowl. Set aside.
- Place spinach, plum, cheese, pecans, raisins, and onion in medium bowl; toss with reserved dressing.
