Super Seedy Freezer Cookies could also be referred to as “frookies.” What do you think? Should we try to make it a thing?

The concept itself is definitely worth repeating. During summer months, the last thing you want to do is turn on the oven, but you may very well still want homemade cookies.

Make these, and spread the word about what they’re called.

15 Servings

1/4 cup pumpkin seeds

1/4 cup sunflower seeds

1/4 cup hemp seeds

1 1/2 tablespoons coconut oil

2 1/2 tablespoons raw honey

1/2 teaspoon vanilla

1/4 teaspoon salt

Super Seedy Freezer Cookies
  1. Place all ingredients in food processor and pulse until combined. (Mixture will be coarse).
  2. Line cookie sheet with parchment paper.
  3. Scoop out small balls of seed mixture, place on tray, and press into desired shape and thickness. (A dark chocolate dip or drizzle won’t hurt, either!)
  4. Place in freezer until firm (about 30-45 minutes).
  5. Store frozen cookies in freezer-safe container, and enjoy!

Seeds are tiny nutrient powerhouses, filled with protein, vitamins, and minerals. And this is a genius way to get more in your diet. They’re sweet and satisfying and are perfect to make on a hot summer day, when just the thought of turning on the oven makes you sweat.
