Trying out the Paleo Diet?

This Pan-Roasted Beef recipe results in the perfect caveman-friendly meal.

You’ve got a hunk of beef for protein (look for grass-fed, organic beef if possible), a side of nutrient-dense broccoli, and your greens, which you know we want to see piled on every plate.

Enjoy after CrossFit…or anytime.

INGREDIENTS

  • 4 ounces lean filet of beef
  • to taste salt
  • to taste freshly ground black pepper
  • 1 cup broccoli, steamed
  • 2 cups mixed greens
  • 1 tablespoon Keri’s Lemon Dressing

DIRECTIONS

  • Preheat the oven to 400 F.
  • Season the filet with salt and pepper.
  • Lightly spray an ovenproof skillet with cooking spray and heat over medium-high heat until nearly smoking.
  • Add the filet; cook each side for approximately 5 minutes.
  • Transfer the pan to the oven and roast 8 minutes more for medium rare.
  • Let filet rest at room temperature while steaming the broccoli and tossing the salad with dressing.

WHY WE LOVE THIS RECIPE

It’s a Paleo-friendly, gluten-free dinner that’s all protein and nutrient-dense vegetables and is simple enough for a weeknight.
