All you need are three basic ingredients to satisfy a nostalgic craving for classic grilled cheese (or to quickly make the kids super happy).

Whether you’re rushing home from a busy work day and are facing a nearly empty fridge or your daughter brought home three extra friends post soccer practice without the slightest heads up, this quick, crowd-pleasing meal will do the trick.

Adding a few thin slices from a ripe tomato sneaks in some veggies and adds extra flavor. The challenge is avoiding the soggy factor: By patting down the juicy tomato slices before they come into contact with the cheese, you can steer clear of the problem all together and keep that sandwich perfectly crisp.

Get creative and cut carbs by trying the recipe open-face style. Hey, add a little avocado and it’s suddenly a trendy “toast.”

INGREDIENTS

  • 1 slice sprouted grain bread
  • 1 slice (1 ounce) cheddar cheese
  • 1 slice ripe tomato
  • pinch cayenne

DIRECTIONS

  • Toast the bread to a light brown.
  • Lay the cheese and tomato on the bread.
  • Place in toaster oven and toast again until cheese melts and top with pinch of cayenne.

WHY WE LOVE THIS RECIPE

Despite its bad reputation, grilled cheese can easily be a wholesome meal, if you do it right. Cheese is a great source of protein and calcium and tomatoes are packed with vitamins. Stack them on sprouted grain bread, and you’re adding healthy whole grains to the mix.
