This recipe was created in partnership with OmniActive Health Technologies for its “Lutein for Every Age” initiative, a consumer awareness initiative with the goal of educating people on the importance of lutein for eye health throughout life.

Ingredients

1 cup almond flour

1 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon salt

½ teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground cloves

¼ teaspoon ground ginger

1 (15 ounce) can pumpkin puree

2 eggs, large

½ cup coconut oil

1 cup coconut sugar

 

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease one 9x5-inch loaf pan.
  2. Whisk flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger together in a large bowl.
  3. Mix pumpkin puree, eggs, oil, and sugar in a separate bowl until well blended.
  4. Stir flour mixture into pumpkin mixture until just blended.
  5. Pour batter into the prepared pans.
  6. Bake in the preheated oven until a toothpick inserted in center comes out clean, about 40 minutes.

This recipe’s star ingredient is pumpkin which is loaded with vitamin A for immune support, lutein for eye health as well as fiber for good gut health. This pumpkin bread doesn’t stop there though—it’s loaded with spices for maximum flavor and antioxidant benefits such as being anti-inflammatory.
