This recipe was created in partnership with OmniActive Health Technologies for its “Lutein for Every Age” initiative, a consumer awareness initiative with the goal of educating people on the importance of lutein for eye health throughout life.

INGREDIENTS

  • 1 cup almond flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • 1 (15 ounce) can pumpkin puree
  • 2 eggs, large
  • ½ cup coconut oil
  • 1 cup coconut sugar

DIRECTIONS

  • Preheat the oven to 350 degrees F (175 degrees C). Grease one 9×5-inch loaf pan.
  • Whisk flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger together in a large bowl.
  • Mix pumpkin puree, eggs, oil, and sugar in a separate bowl until well blended.
  • Stir flour mixture into pumpkin mixture until just blended.
  • Pour batter into the prepared pans.
  • Bake in the preheated oven until a toothpick inserted in center comes out clean, about 40 minutes.
