Kale, Avocado, and Blood Orange Salad

Is there anything better than kale and avocado? Yep, kale, avocado, and blood oranges—the star ingredients in this easy-to-make salad bursting with vitamin C. No winter colds here!
Ingredients
Directions
- Mash avocados with lemon juice, sea salt, and pepper.
- Add chopped kale. Thoroughly mix, coating the kale with the avocado.
- Peel and cube blood oranges, then add to the salad.
- Toss in the pine nuts and serve.
WHY I LOVE THIS RECIPE
One of my favorite ways to enjoy the tougher texture of kale is to “marinate” it in mashed avocado and lemon juice, a great base for any kale salad. From there, I add winter seasonal citrus fruits—in this case, blood oranges— along with pine nuts for a buttery taste. This gives the perfect balance of color, flavor, antioxidants, and nutrients.
