Avocado Boat Egg Bake
There are a million reasons we love avocados. High up on the list is this one: They happen to be the perfect shape to serve as “boats” that can ferry eggs directly into your mouth.
Avocado boats are not only cute and delicious, they also might take the prize for the easiest way to cook eggs. If your scrambled eggs keep coming out rubbery, your fried eggs are too runny, and your poached eggs won’t stay in one piece…just crack a shell into an avo and stick it in the oven.
Avocado toast, who?

- Bake for 10-15 minutes, or until the white is set and the yellow is slightly runny.

WHY WE LOVE THIS RECIPE
It’s simple, fast, delicious, and nutrient-dense. Avocados are filled with healthy fat and vitamins, while the eggs provide protein and many other essential nutrients. Herbs complete the meal with both added flavor and antioxidants. Should we mention these look super cute on Insta?
