4th of July Parfait Cup “Pies”

Come 4th of July, lots of people have Pinterest boards dedicated to flag cakes.
If you’re a regular Betty Crocker, by all means, go for it (and invite us over for a slice and sparklers, please).
But for many people, baking and decorating elaborate cakes is a little too time consuming (or above their kitchen skill level).
If that’s the case, these “pies” are a great substitute. All you have to do to whip them up is a little bit of stirring and layering. Use the time you saved to jump in the pool again or practice your “oohs” and “aahs” for the fireworks.
Ingredients
Directions
- Mix the crème fraiche, sour cream and yogurt together. For a picnic, store in an airtight container in your cooler until you are ready to serve.
- When ready to serve, layer the yogurt mixture, the strawberries, the yogurt, the blueberries in the cups to make a beautiful parfait. Garnish with a few extra berries.
WHY WE LOVE THIS RECIPE
Oh say, can you see…what we see when we serve these on Independence Day? Red: The color of anti-inflammatory strawberries. White: The color of protein and calcium. Blue: The color of antioxidant-rich blueberries.
