Healthy Pizza Quiche

Pizza night is a weekly ritual in many homes and we’ve got just the thing to shake it up a bit. This quick and easy pizza quiche from The Flexible Chef makes even the  most devoted pizza lovers oooh and aaah! Made with chopped sautéed veggies, eggs, marinara sauce, and cheese, you probably don’t even need to make a trip to the store to buy ingredients.

2 cups chopped sautéed veggies

3 eggs

1 cup marinara sauce (depending on how saucy you like it)

1/2 cup mozzarella cheese

1/2 cup parmesan cheese

dash salt, to taste

dash pepper, to taste

dash Olive oil, to grease pan



Healthy Pizza Quiche
  1. Preheat oven to 350ºF.
  2. Finely chop your veggies and sauté them. I used a medley of onion, zucchini, and mushroom. Take the time to brown your onions. This will help you achieve a great depth of flavor!
  3. In a large bowl, mix your veggies with eggs, pizza sauce, cheeses, and seasonings. Use more or less cheese and sauce based on how you like it.
  4. Grease a round pie pan with olive oil and fill with mixture.
  5. Bake for 20 minutes or until set.
