Grilled Chicken Sandwich with Herbed Yogurt Spread
You can’t go wrong with a classic grilled chicken sandwich when it comes to flavor, but they’re often served with calorie bomb ingredients like thick white bread, mayo, and hunks of melted cheese.
This one’s open-faced to cut back on the bread portion. It’s also made with a delicious herb spread that’s healthier thanks to a Greek yogurt base and blows mayo out of the water when it comes to taste.
Make the spread and grill chicken breasts ahead of time and then you’ll be able to assemble one of these quickly for lunch later on.

- Combine the yogurt, garlic, parsley, thyme, and oregano in a shallow bowl. Season with salt and freshly ground black pepper to taste.
- Reserve 2 tablespoons of the yogurt-herb mixture, cover with plastic wrap, and refrigerate.
- In a bowl, coat the chicken on all sides with the remaining yogurt-herb mixture. Cover with plastic wrap and refrigerate 15 minutes.
- Coat a nonstick grill pan with cooking spray and preheat over medium-high heat. Cook the chicken about 6 minutes per side, or until cooked through.
- Spread 1 tablespoon of the reserved yogurt-herb mixture on the bread. Place the lettuce and chicken on top.
- Spread the remaining yogurt-herb mixture over the chicken and top with the cucumber and onion.

Chicken is a great source of lean protein and B vitamins. The herbed yogurt spread has calcium, protein, and probiotics, which help with healthy digestion and is bursting with flavor. Make a little extra to keep in the fridge and you’ll have it ready to spread elsewhere.
