Avocado Toast with Roasted Zucchini and Corn

How much avocado toast can you really eat before it starts to get old? (Okay, a lot, but…)

The good news is it’s an easy recipe to mix up. You can add all kinds of veggies, protein sources like cheese or sliced grilled chicken, and many different herbs and spices. It’s sort of hard to create a combo that won’t work.

Here, we top the avo goodness with leftover spicy roasted zucchini with corn, for a summery take on toast (with a little kick).

Ingredients

1/3 avocado

1 slice Ezekial toast

1/3 cup spicy roasted zucchini and corn

 

Directions

  1. Mash avocado and spread over slice of Ezekial toast.
  2. Layer spicy roasted zucchini and corn over avocado, and enjoy!

WHY WE LOVE THIS RECIPE

Avo toast is a great source of (Instagram-friendly) healthy fats, while zucchini provides fiber, folate, and vitamin C. While corn gets a bad rap because it’s such a massive GMO commodity, it’s actually filled with antioxidants. (Just buy it fresh from a local organic farmstand if you can.)
