Watermelon Cucumber Smoothie

Quick, make a mental list of ingredients that remind you of summer. Watermelon? Cucumber? Fresh mint? Juicy strawberries? They’re all represented in this smoothie, which is just as refreshing as it is delicious. An added benefit: creamy kefir provides probiotics that are great for your gut health, AKA it’s a good poolside beverage to ward off bloating in your bathing suit.  

Ingredients

1 cup Kefir
1/2 cup cucumber, sliced
1 cup watermelon, frozen and cubed
1/2 cup strawberries
1 teaspoon fresh mint leaves

Directions

  1. Place ingredients in blender and blend until desired thickness.
WHY WE LOVE THIS RECIPE First, it tastes like summer. Second, watermelon contains more potassium than bananas (hello, electrolytes!) and plenty of cancer-fighting lycopene, while cucumber is ultra-hydrating. Strawberries provide a trifecta of powerful inflammation-fighting antioxidants, including vitamin C.
