Ingredients

2 eggs
1/4 cup mushrooms and red peppers, chopped
1/2 cup low fat cottage cheese
to taste hot sauce
1 slice sprouted grain bread, toasted

Directions

  1. Whisk eggs and combine with mushrooms and peppers.
  2. Pour egg and vegetable combo into to preheated nonstick pan coated with cooking spray.
  3. Cook on low heat until eggs are set.
  4. Transfer omelette to serving plate, add cottage cheese to one half of omelette and fold over remaining half.
  5. Add hot sauce to taste and serve with toast.
