Healthy Bran Muffins

Bran muffins have a reputation for being tasteless, but we think these are pretty damn delicious, thank you very much. Applesauce, cinnamon, almond milk, and minimal sugar provide plenty of flavor. Make them even tastier by spreading almond or peanut butter on one, which will also add the protein and healthy fats you need to turn it into more of a meal (or filling snack).

Ingredients

1 1/2 cups whole wheat flour
2 tablespoons sugar in the raw
2 tablespoons ground flaxseeds
1 tablespoon baking powder
1/4 teaspoon sea salt
2 cups any all bran cereal
1 1/4 cups unsweetened almond milk
2 egg whites
1/4 cup unsweetened chunky applesauce
1 teaspoon ground cinnamon

Directions

  1. Preheat oven to 400 F.
  2. Stir together flour, sugar, flaxseeds, baking powder, and salt.
  3. In separate large bowl, combine cereal and milk; let stand for 2-3 minutes.
  4. Add egg whites and applesauce and mix well.
  5. Add flour mixture and stir until combined.
  6. Spoon into 12, 2 ½ inch muffin tins with liners.
  7. Bake approximately 20 minutes.
  8. Dust with cinnamon and cool on rack.
