Easy Soup Dinner

“Recipe” is a little bit of a misnomer here. This one’s basically a quick tutorial on throwing a few prepared foods together into the fastest healthy meal you could imagine. It’s for the nights when you get home from work at 9:00 p.m. and can barely see straight. Then, when you look in your pantry and refrigerator, all you’ve got is an old can of soup, leftover bacon, and a few more spoons of Greek yogurt at the bottom of the container. Somehow, it actually all works out. (Just remember to check the sodium when you buy your soup. Canned soups tend to be super salty.)

Ingredients

1 can soup of choice (lentil, black bean, pea, etc.)
4 slices canadian bacon, diced (don't forget nitrate free!)
1/4 red onion, diced
2 tablespoons shredded cheddar cheese
2 tablespoons Greek yogurt

Directions

  1. Heat soup over stove.
  2. In a small skillet coated in cooking spray, heat canadian bacon over medium heat.
  3. Pour soup into bowls and top with bacon, sour cream and cheese.
WHY WE LOVE THIS RECIPE It’s a hearty, filling meal for times when time is in short supply. Legumes are a great plant-based source of protein, fiber, and folate, and throwing in some chopped onions provides an antioxidant boost.
