Ingredients

2 cups chopped and sautéed veggies of your choice
3 eggs
1 cup marinara sauce (depending on how saucy you like it)
1/2 cup mozzarella cheese
1/2 cup parmesan cheese
dash salt, to taste
dash pepper, to taste
dash olive oil, to grease pan

Directions

  1. Preheat oven to 350ºF.
  2. Finely chop your veggies and sauté them. I used a medley of onion, zucchini and mushroom. Take the time to brown your onions. This will help you achieve a great depth of flavor!
  3. In a large bowl, mix your veggies with eggs, pizza sauce, cheeses and seasonings. Use more or less cheese and sauce based on how you like it.
  4. Grease a round pie pan with olive oil and fill with mixture.
  5. Bake for 20 minutes or until set.
