Energy-Boosting Peanut Butter Bites

These peanut butter bites taste amazing thanks to the coconut flavor pairing, and they’re an ideal snack. What does an ideal snack look like? It provides protein and healthy fats to keep you satisfied and give you energy without being a total calorie bomb (since it’s supposed to fill in gaps between meals, not become a meal). We love that these are automatically portion-controlled, since they’re made in a mini muffin pan and end up being bite-sized.

Ingredients

Crust
1/4 cup ground flaxseed
1/2 cup wheat germ
3 tablespoons coconut oil
Filling
1 cup peanut butter
1 tablespoon honey
1/4 cup shredded unsweetened coconut
1/4 cup chia seeds
1 teaspoon vanilla extract
1/2 teaspoon sea salt

Directions

  1. In a mixing bowl, combine the ground flaxseed, wheat germ, and coconut oil until well incorporated.
  2. Grease a mini muffin tin (or loaf pan) with additional coconut oil, and spoon mixture into each cup, pressing down to make a ¼ inch thick crust.
  3. In a clean mixing bowl, add peanut butter, honey, coconut, chia seeds, vanilla, and sea salt, and mix until well combined.
  4. Spoon peanut butter mixture on top of crust.
  5. Place muffin tin into freezer to set for at least 15 minutes, and enjoy!
  6. Store in freezer, will soften at room temperature.
