Cucumber Salad

This cucumber salad is as simple as a salad gets, with just two whole food ingredients (without counting the dressing). It’s filled with flavor, though, thanks to Herbes de Provence, a traditional blend of dried herbs from southern France that you can buy premixed in a spice jar. Typically, the blend contains thyme, savory, oregano, and marjoram. Sometimes it also includes rosemary or lavender. No matter the approach, it’s incredibly aromatic.

Ingredients

2 medium cucumbers
1 1/2 pints grape tomatoes, quartered
3 tablespoons rice vinegar
1/2 teaspoon sea salt (optional)
1 tablespoon freshly ground black pepper
2 teaspoons Herbes de Provence

Directions

  1. Peel cucumbers in strips lengthwise, leaving ¼ inch of skin in between each strip. Dice cucumbers.
  2. Place cucumbers and tomatoes in large bowl.
  3. Toss cucumbers and tomatoes with rice vinegar, salt (if using), black pepper, and herbs. Serve immediately.
WHY WE LOVE THIS RECIPE It’s a simple combo of two healthy vegetables. Cucumbers are super hydrating, while tomatoes contain vitamin C and K, potassium, and heart-healthy lycopene.
