Crunchy Chicken Salad Boats

OMG, have you ever made cucumber boats? They’re a lot of fun and creating this recipe kind of made us want to eat everything out of them from now on. Kale salad? Gazpacho? Chili? (That last one might be weird…) Basically, it’s just another really fun (and kid-friendly) base for a meal, instead of putting things on toast, for instance, or just eating them out of a bowl. These are filled with hearty, healthy chicken salad, so they’re great for lunch.

Ingredients

3 tablespoons  Greek yogurt
1 teaspoon apple cider vinegar
1⁄2 teaspoon honey
1⁄4 teaspoon gingerroot, grated
3 ounces rotisserie chicken breast, skin removed and shredded (about 3⁄4 cup)
1 tablespoon + 1 teaspoon walnuts, chopped
2 tablespoons Granny Smith apple, finely chopped
2 tablespoons red grapes, quartered
2 Kirby cucumbers, halved lengthwise

Directions

  1. Combine yogurt, vinegar, honey, and gingerroot in medium bowl.
  2. Add chicken, walnuts, and apple. Mix well. Gently stir in grapes until just combined.
  3. Seed and scoop out flesh from cucumber halves using a rounded teaspoon or melon baller. Divide chicken salad and place in cucumber "boats".
WHY WE LOVE THIS RECIPE You didn’t think our chicken salad would be soaked in mayo, did you? This one utilizes healthy ingredients like Greek yogurt, apple cider vinegar, and a little honey to make the creamy coating. It also contains chicken (duh) for protein, heart-healthy walnuts, and ginger, a veritable super spice. And yes, you should eat the cucumbers as you go, too. They’re hydrating and are a great source of vitamins like C and K.
