Coconut French Toast

Sometimes adding just one creative ingredient can totally change a dish. That’s how we feel about this Coconut French Toast. French toast is so tasty on its own, but add a little coconut oil and coconut flakes and suddenly it’s a little (but not too) tropical. Perfect for a Sunday breakfast the kids will love.

Ingredients

2 eggs
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 teaspoon coconut oil
4 slices sprouted grain bread
1/2 cup shredded unsweetened coconut
1/3 cup sliced strawberries

Directions

  1. In a shallow dish, whisk together the eggs, vanilla, and cinnamon; set aside.
  2. In a skillet, melt coconut oil over medium heat.
  3. Dip bread one slice at a time into the egg mixture, soaking each side.
  4. Move the bread from the egg mixture directly to the coconut to cover both sides.
  5. Carefully lay the bread onto preheated skillet and cook until golden brown on each side, about 2-3 minutes.
  6. Slice toast diagonally and serve topped with strawberries.
