Sometimes adding just one creative ingredient can totally change a dish. That’s how we feel about this Coconut French Toast. French toast is so tasty on its own, but add a little coconut oil and coconut flakes and suddenly it’s a little (but not too) tropical. Perfect for a Sunday breakfast the kids will love.

- In a shallow dish, whisk together the eggs, vanilla, and cinnamon; set aside.
- In a skillet, melt coconut oil over medium heat.
- Dip bread one slice at a time into the egg mixture, soaking each side.
- Move the bread from the egg mixture directly to the coconut to cover both sides.
- Carefully lay the bread onto preheated skillet and cook until golden brown on each side, about 2-3 minutes.
- Slice toast diagonally and serve topped with strawberries.
