It doesn’t take much to turn cherry tomatoes into a Cherry Tomato Salad, as you can see here. Yes, you could toss them with all kinds of other vegetables, herbs, and dressings. But when they’re super fresh and you just want to show off their flavor, this salad lets them shine, with just a little bit of cheese and balsamic. It’s also great for when you’re so busy that even making a quick salad feels daunting. (We got you.)

Ingredients

1 ounce feta cheese, crumbled or fresh mozzarella, sliced
10 cherry tomatoes, sliced in half
1 tablespoon balsamic vinegar

Directions

  1. Add cheese and tomatoes to bowl.
  2. Drizzle with balsamic vinegar.
WHY WE LOVE THIS RECIPE Cherry tomatoes may be tiny, but they’re powerful. They’re loaded with anti-inflammatory compounds and a long list of beneficial phytonutrients. The cheese adds a touch of protein, too.
