Buffalo Cauliflower Bites

Buffalo wings are a classic party snack, but they’re usually deep fried and made with cheap, low-quality chicken. Whether you’re going veg or just want to lighten up game day fare, cauliflower is the answer. (There’s really nothing the cruciferous veg can’t do, right?) You’ll especially love this recipe for cauliflower buffalo bites because it requires just five simple ingredients. All you have to do is mix, toss, and bake—and maybe plan on making more during breaks in the game.

Ingredients

2 teaspoon paprika
1 teaspoon garlic powder
1 tablespoon olive oil
1/3 cup + 1 tablespoon hot sauce
1 head cauliflower, cut into florets

Directions

  1. Preheat oven to 450 degrees.
  2. In a small bowl, mix the paprika, garlic powder, olive oil, and hot sauce.
  3. To a large bowl, add the cauliflower and pour in approximately half of the mixture and mix until evenly coated.
  4. On a parchment lined baking sheet, spread the cauliflower out evenly and bake for 20-30 minutes, or until tender.
  5. Remove from the oven and let rest for 5 minutes, before adding remaining sauce mixture and tossing until evenly coated.
