Breaded Baked Chicken Tenders

It’s rare you’ll find us recommending “breading” anything, but we’ll make an exception for chicken fingers. Of course we use whole wheat breadcrumbs instead of the white bread variety, and then we bake the chicken strips instead of frying them. The result is a much healthier version than grabbing KFC’s tenders, and it’s an easy source of protein everyone of all ages will love.

Ingredients

1 cup whole wheat bread crumbs or Panko whole wheat bread crumbs
1 tablespoon wheat germ
6 ounces thin chicken cutlets (cut into 1 ounce strips)
1 egg

Directions

  1. Heat oven to 375 F and line baking pan with parchment paper and spray with cooking spray.
  2. Mix together bread crumbs and wheat germ.
  3. Dip chicken in egg, then in bread crumb and wheat germ mixture and place on pan and bake, approximately 6 to 8 minutes.
