Berry Quinoa Salad

This recipe may strike you as super weird at first, even if you generally make quinoa salad like it’s going out of style. Whether you add Mexican spices and vegetables, do it Greek-style with tomato, feta and olives, or just throw in whatever vegetables you happen to have with a little olive oil and lemon, it’s generally a savory dish. Not here. We toss the super grain with sweet berries, because … why not? And guess what? It works. Like, really works.  

Ingredients

1 cup cooked quinoa
1/2 cup olive oil
1-2 limes fresh squeezed lime juice
to taste freshly ground black pepper
1 cup blueberries
1 cup sliced strawberries
1 cup sliced peaches
6 cups spinach

Directions

  1. Drizzle cooked quinoa with olive oil and lime juice; toss with fork to separate grains and season with pepper to your liking.
  2. Add blueberries, strawberries, and peaches to quinoa and toss lightly.
  3. Serve quinoa mixture on top of spinach.
