Balsamic Chicken and Kiwi Kebabs

Kebabs bring the fun factor to grilling, and in this recipe, kiwifruit provides a naturally sweet, unexpected flavor boost to an otherwise classic balsamic chicken and zucchini pairing. Because most of the time required for this recipe is for allowing the chicken to marinate, it’s a super convenient meal to make, even on weeknights. Marinate your chicken at lunchtime and by dinner, all you have to do is cut your kiwifruit, skewer, grill, and enjoy.

Ingredients

1/2 lb boneless chicken breast, cut into 1-inch pieces
¼ cup balsamic vinegar
2 garlic cloves, minced
1 teaspoon salt
½ teaspoon pepper
1 teaspoon Italian seasoning
4 kiwis
1-2 medium zucchini, sliced into thick rounds

Directions

  1. In a bowl, combine chicken, balsamic vinegar, garlic, salt, pepper, and Italian seasoning and toss to combine. Cover, refrigerate, and allow to marinate for at least 30 minutes or up to 4 hours.
  2. When ready to cook, peel kiwi and cut into halves. Optional: Leave skin on.
  3. Assemble 4 skewers with alternating pieces of chicken, zucchini, and kiwi. Grill over medium heat until chicken is cooked through.
