Non-Dairy Avocado Eggnog

Like a lot of holiday party foods, eggnog can be a serious calorie bomb. But if you love it and want to enjoy it by the fire in your Christmas sweater, there are ways to do it in a way that’s not as awful for your health. This approach changes up the standard recipe a bit to cut out some of the sugar and dairy and add in better ingredients. Instead of heavy cream, we use coconut milk and add creamy, nutritious avocado. Listen, this is still no protein smoothie. Drink it in small servings to toast to the season, not as a regular everyday beverage.

Ingredients

3 cups coconut milk
2 whole cloves
1 3 - 4 inch stick of Ceylon cinnamon or canela
1/2 teaspoon grated nutmeg
1 teaspoon vanilla extract
1/4 teaspoon baking soda
1/2 cup sugar in the raw
6 large egg yolks
1/2 cup coconut rum (may substitute coconut tequila)
1/4 cup ripe avocados, mashed
1/2 scoop Life's Abundance Vanilla Protein Powder

Directions

  1. Combine milk, cloves, cinnamon, nutmeg, vanilla extract and baking soda in a medium sized saucepan over medium heat. Bring to simmer, then reduce to low heat for 15 minutes. Strain mixture into a medium sized bowl.
  2. In a small bowl, beat egg yolks and mix in sugar until the mixture has thickened. Slowly pour the mix into the coconut milk, then use a whisk to blend.
  3. Return the mixture to a clean saucepan over low heat, occasionally stirring for 12-15 minutes, until thickened. Remove from heat.
  4. Cool slightly, pour into a blender along with the mashed avocado and coconut rum. Puree until completely smooth.
  5. Enjoy warm or chilled over ice.
