Yogurt Sundae

WTF is a yogurt sundae? Good question. First of all, it’s a fun way to eat yogurt. By now, we’re guessing you’re bored of the same old cup sprinkled with granola every day. This is a way to mix it up. It’s also a way to get your kids excited about a healthy breakfast. Tell them it’s a sundae and…voila! Second of all, you could totally eat and serve this dish as dessert. Greek yogurt is tart and savory and the berries add satisfying sweetness. The rice and toppings, meanwhile, add heartiness and texture.

Ingredients

6 ounces Greek yogurt
¼ cup strawberries
¼ cup blueberries
½ cup brown rice or oats
1 tablespoon ground flaxseeds, chia seeds, or wheat germ

Directions

  1. Layer yogurt with 1/3 of strawberries, blueberries, and rice or oats.
  2. Repeat twice.
  3. Sprinkle ground flaxseeds, chia seeds, or wheat germ.
