Pumpkin Spice Chia Pudding

Another healthy way to enjoy that pumpkin spice flavor? Yes, please. Chia pudding is a protein- and healthy fat-packed dish that can be eaten for breakfast, dessert, or as a post-workout snack. Add pumpkin spice and it’s even more delicious than usual.  

Ingredients

1/4 cup + 1 tablespoon chia seeds
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves
1/4 teaspoon cardamom
1/2 cup almond or coconut milk
1/2 teaspoon honey
1/4 teaspoon vanilla extract

Directions

  1. In a high speed blender, add all ingredients and let soak for 10 minutes. Blend on high until a smooth consistency is formed.
  2. Store and refrigerate in a sealed container until fully cooled.
  3. Top as liked. Suggested toppings: Cinnamon Spice Roasted Pepitas (see recipe), almond butter, cacao nibs, or fruit of choice. Enjoy!
