How many times have you sat down at a restaurant and exclaimed, “Oh my god, they have truffle fries!” No? Just us? Well, if you’ve never had them, truffle fries are kind of to die for. French fries, however, are on our sad list of inflammatory foods. One solution: take that amazing truffle powder flavor and put it on a healthy vegetable. It’s not quite the same, but it’s really, really tasty. Plus, adding truffle to roasted asparagus takes a typical vegetable side dish and makes it fancy enough to serve at a dinner party or on a holiday table.

- Preheat oven to 400 degrees.
- On a baking sheet, spread asparagus evenly, and top with shallots.
- Drizzle with avocado oil, and sprinkle truffle powder.
- Roast for approximately 20 minutes.
- Optional: Add more truffle powder after roasting to taste.
