Sunrise Mango Oatmeal

This breakfast is best enjoyed beneath a palm tree, while soaking up the morning sun and taking in the sound of waves crashing onto soft sand nearby. If that’s not in the cards, you can conjure that scene with each bite of sweet coconut, juicy mango, and crunchy macadamia nut. We’re not meditation experts, but we’re pretty sure that kind of visualization will lead to immediate stress relief. That’s even if (or maybe especially if) you’re a city dweller, it’s winter, and what you actually see while sitting at your kitchen table is a cold, dark alley. Plus, oatmeal helps increase production of serotonin, a feel-good chemical known for its mood-boosting effects.

Ingredients

1/3 cup cooked rolled oats, prepared with water
2 tablespoons unsweetened, coconut milk
1/4 teaspoon pure vanilla extract
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 cup chopped ripe mango
1 tablespoon chopped macadamia nuts
1/2 teaspoon honey

Directions

  1. Combine the oats, coconut milk, and vanilla extract in a small bowl.
  2. Add the cinnamon and nutmeg and stir to combine.
  3. Top with the mango and macadamia nuts and drizzle with honey. Sprinkle additional cinnamon, if desired.
