This simple shrimp salad looks exactly like something that would be on the menu at a fancy detox spa, right? But you can make it at home in a couple of minutes, with just a few ingredients. The most interesting among them is hearts of palm, crunchy vegetables harvested from the center of the cabbage palm tree. They look a lot like white asparagus, but their flavor is milder, so you can throw them in salads with lots of different flavor profiles. They’re also a great source of fiber, iron, and potassium. Once you get a taste of them in this dish, you may want to start throwing them in all kind of other meals.

Ingredients

2 cups mixed baby greens
4 to 6 shrimp, steamed and peeled
1/4 avocado, sliced
2 hearts of palm spears (canned in water), sliced
1 lemon
to taste sea salt

Directions

  1. In serving bowl, toss greens with shrimp, avocado, and hearts of palm.
  2. Squeeze lemon juice on top and season with salt.
