Roasted Curry Chickpeas

Did you know you could roast chickpeas? Garbanzos are well-known as a plant-based source of protein, but they’re usually thrown in salads or made into hummus and falafel. Turns out you can also spice them and pop them in the oven to crisp them up into a crunchy, satisfying snack. Keep a bag in your desk drawer to get over the afternoon slump with protein and a curry-based kick.

Ingredients

1 15-ounce can chickpeas, rinsed and drained
1 teaspoon curry powder
1 tablespoon olive oil
1 tablespoon balsamic vinegar
pinch salt

Directions

  1. Preheat oven to 400 F.
  2. Toss all ingredients in a medium-sized bowl and spread on a baking dish that is lightly coated with cooking spray. Bake for 30-40 minutes, or until browned.
WHY WE LOVE THIS RECIPE These crispy, spiced-up garbanzos make the perfect afternoon snack. Chickpeas are high in fiber and protein (to keep you full between meals and prevent cupcake cravings) and contain important vitamins and minerals like folate and manganese. They’re also totally delicious and portable. Make a batch, throw them in a baggie, and pop them in your mouth in between meetings or on the way to the airport.
