Pan-Roasted Beef

Trying out the Paleo Diet? This Pan-Roasted Beef recipe results in the perfect caveman-friendly meal. You’ve got a hunk of beef for protein (look for grass-fed, organic beef if possible), a side of nutrient-dense broccoli, and your greens, which you know we want to see piled on every plate. Enjoy after CrossFit…or anytime.  

Ingredients

4 ounces lean filet of beef
to taste salt
to taste freshly ground black pepper
1 cup broccoli, steamed
2 cups mixed greens
1 tablespoon Keri’s Lemon Dressing

Directions

  1. Preheat the oven to 400 F.
  2. Season the filet with salt and pepper.
  3. Lightly spray an ovenproof skillet with cooking spray and heat over medium-high heat until nearly smoking.
  4. Add the filet; cook each side for approximately 5 minutes.
  5. Transfer the pan to the oven and roast 8 minutes more for medium rare.
  6. Let filet rest at room temperature while steaming the broccoli and tossing the salad with dressing.
