One-Pan Sausage, Onion, and Peppers

You can eat sausage and peppers as a greasy hoagie, or you can eat it as fast, healthy dinner. Here’s how to choose the latter. Follow this simple recipe that’s filled with healthy veggies and protein and basically only requires chopping up a bunch of food and putting it in the oven. The key? Look for sausages made with organic meat, either in the organic section at the grocery store or from a local butcher shop that specializes in taking really good meat (like grass-fed beef or heritage pork) and turning it into sausage in-house.

Ingredients

4 spicy Italian sausages (cooked)
1/2 large white onion, cut into strips
2 orange bell peppers, cut into strips
1 yellow bell pepper, cut into strips
2 tablespoons balsamic vinegar
1 tablespoon olive oil
salt (to taste)
pepper (to taste)

Directions

  1. Preheat oven to 350 degrees.
  2. Line a large baking sheet with parchment paper.
  3. Thinly slice peppers and onions into equal sized pieces.
  4. Cut sausage into rounds.
  5. Spread the peppers, onion, and sausage onto the baking sheet and drizzle balsamic vinegar, olive oil, salt, and pepper, and toss to evenly combine.
  6. Place the baking sheet in the oven for 40 minutes.
  7. After 40 minutes, broil for an additional 5 minutes.
