Smoked Salmon Toast

We’re always talking about how much we love salmon, and that applies to the smoked kind, too. Especially since you don’t even have to cook it before you eat it. Here, the salty, smoky flavor is complemented by the creamy cheese, fresh tomato, and crunchy, toasted bread. The simple toast is perfect as a hearty snack or for breakfast or lunch as an open-faced sandwich. If it feels like you need a little more substance or protein, you can even thrown an egg on top. You can also make a bunch of them and cut them into smaller pieces to serve them as hors d’oeuvres at a brunch or dinner party.  

Ingredients

1 slice sprouted grain bread, toasted
1 ounce goat cheese
2 ounces (2 slices) fresh lox
2 slices tomato
1 slice red onion
1 teaspoon capers
1/2 teaspoon fresh dill
1/4 teaspoon freshly ground black pepper

Directions

  1. Spread with cheese on toasted bread, top with lox, tomato, onion.
  2. Sprinkle capers and then dill and add pepper.
WHY WE LOVE THIS RECIPE Salmon is an excellent source of protein, the toast is full of fiber, cheese provides calcium, and tomatoes are loaded with vitamin C (which helps the body absorb that calcium, by the way).
