Lobster Roll with Cilantro Sauce

In need of a seafood fix this summer? Our friends at Global Glow (and a Nutritious Life Studio student!) has shared this lobster roll recipe that will deliver all  that seafood deliciousness you’re dreaming of. Made with fresh lobster chunks and a just right mix of mayo & Dijon, this salad provides a tangy punch. Topped with a citrusy cilantro sauce, it’s the perfect addition to a sourdough bun or a hearty green salad. 

Ingredients

1 pound fresh lobster meat (pre-cooked and cut into large chunks)
3 stems celery, finely chopped
3 green onions, chopped
1 tablespoon olive-oil based mayonnaise
1 tablespoon Dijon mustard
Dash Salt & pepper to taste
6 hot dog buns (we’d opt for sprouted grain or sourdough)
1 teaspoon garlic ghee butter
1 bunch Boston lettuce leaves
1/4 teaspoon fresh dill, to garnish
1 lime or lemon, to garnish
Dash paprika, sprinkle on top of lobster
1/2 cup plain Greek yogurt
1 lime, juiced
1 cup cilantro
1/2 cup cup fresh dill
2 garlic cloves
½ teaspoon crushed red pepper, to taste

Directions

  1. Blend all cilantro sauce ingredients (½ cup plain Greek yogurt, 1 lime, juiced, 1 cup cilantro, ½ cup fresh dill, 2 garlic cloves, ½ teaspoon crushed red pepper, to taste, salt & pepper to taste) in a food processor until smooth, set aside in the fridge.
  2. Add chopped celery and green onions to a bowl with lobster chunks. Mix in mayo, dijon and salt and pepper to taste.
  3. Lightly butter the hot dog buns with garlic ghee butter, toast until golden.
  4. Line the buns with lettuce leaves, scoop a generous amount of lobster meat in each bun, spoon cilantro sauce over the lobster, decorate with fresh dill, a drizzle of lime or lemon juice and a pinch of paprika. Enjoy!
WHY WE LOVE THIS RECIPE Cilantro, garlic and onions  load this recipe with flavor and also add an antioxidant boost. Lobster, a favorite summertime protein, is low in saturated fat and high in protein. It also contains zinc, phosphorus, vitamin B12, magnesium, vitamin E, and even omega-3s.
