Jicama is a root vegetable that we absolutely love. Not only is it fun to say, it has a mild flavor that makes it versatile in the kitchen, and it has a really nice crunch, similar to water chestnuts or rutabaga. It’s also packed with fiber and vitamins. Fun fact: One cup of jicama contains half of the vitamin C you need for the whole day. Turn it into a slaw, here, that you can serve as a barbecue side dish or to top grilled chicken, fish, or a sandwich.

Ingredients

3/4 cup sliced carrots
1/2 cup sliced jicama
2 teaspoons brown rice vinegar
1 teaspoon Dijon mustard
1 teaspoon olive oil

Directions

  1. Combine all ingredients together and enjoy.
WHY WE LOVE THIS RECIPE Jicama is a star veggie and carrots add even more crunch and nutrients. Slaws also tend to be drenched in mayo, but we cut out the unnecessary fat by using mustard, olive oil, and vinegar.
