This recipe is perfect for hosting a small gathering on game day, or a Sunday night dinner at home with the family. Either way, it’s a nutritious and simple meal to make in your Instant Pot. - Set your Instant Pot to the “Sauté” setting.
- Add avocado oil and 3 garlic cloves. Sauté for 2 minutes.
- Add vegetable broth, carrots, and sweet potato.
- Set Instant Pot to “Pressure” setting for 1 minute.
- Once the carrots and sweet potato are cooked, use an immersion blender to blend the contents of the pot into a puree. (If you don’t have an immersion blender, pour into a blender to puree.)
- Return puree to the Instant Pot. Add chicken, celery, chili powder, green chilies, salt and pepper.
- Set Instant Pot to “Soup/Broth” setting.
- After soup is fully cooked, remove the chicken and shred.
- Place shredded chicken back into the pot and add 1 juiced lime.
