While beef is the main ingredient and is what gives it a hearty feel, it contains even more vegetables than meat. And you can mix it up and throw in whatever vegetables you’ve got, especially ones you’re afraid are going to go bad. You really can’t go wrong with flavor combos in a dish like this.

- Heat oil in a medium sized saucepan over medium heat. Reduce heat to low and add garlic and cook for 2 to 3 minutes.
- Add vegetables and cook until veggies begin to soften.
- Add meat and cook until done.
- Leave meat in chunks large enough to be eaten with little fingers!
- Serve with sweet potato.
