Ground Meat Stew

When you think stew, you think “hours and hours of cooking time.” This simple version, however, cuts out the slow cooking and keeps it simple. The best part about it? While beef is the main ingredient and is what gives it a hearty feel, it contains even more vegetables than meat. And you can mix it up and throw in whatever vegetables you’ve got, especially ones you’re afraid are going to go bad. You really can’t go wrong with flavor combos in a dish like this.

Ingredients

1 teaspoon olive oil
1/2 teaspoon chopped garlic
2 cups assorted, chopped veggies (onion, asparagus, broccoli, zucchini, spinach, mushrooms)
4 ounces ground meat (such as turkey, pork, grass fed beef)
1 baked sweet potato

Directions

  1. Heat oil in a medium sized saucepan over medium heat. Reduce heat to low and add garlic and cook for 2 to 3 minutes.
  2. Add vegetables and cook until veggies begin to soften.
  3. Add meat and cook until done.
  4. Leave meat in chunks large enough to be eaten with little fingers!
  5. Serve with sweet potato.
WHY WE LOVE THIS RECIPE It’s heavy on the vegetables, and in addition to protein, beef (the organic, grass-fed kind, if you can get it) provides vitamin B12, zinc, and iron. This dish is a great go-to for Paleo and gluten-free eaters.
